    About this recipe: This sweet and spicy fresh rhubarb chutney is prepared in a microwave. Rhubarb is great for chutneys, because it keeps a good texture and is naturally tangy.

    Ingredients
    Makes: 1 to 1.5kg chutney

    • 550g (1 1/4 lb) fresh rhubarb, trimmed and sliced
    • 225g (8 oz) onions, finely diced
    • 225ml (8 fl oz) white wine vinegar
    • 225g (8 oz) light brown soft sugar
    • 1 pinch salt
    • 2.5cm (1 in) piece fresh root ginger, grated
    • 1 dessertspoon ground ginger
    • 1 clove garlic, crushed
    • 110g (4 oz) sultanas

    Method

    1. Combine all ingredients in a microwave-safe bowl and cook for 8 minutes in the microwave until the sugar has dissolved, stirring several times.
    2. Microwave uncovered for another 15 minutes until thick and well reduced. Stir twice in the first 10 minutes, then every following minute.
    3. Pour into warm sterilised jars. Screw on lids and boil for 10 minutes to seal.

    Tip

    For extra spice, add 1 tablespoon fresh green chilli, seeded and finely chopped.
