Pan fried potatoes with thyme and cheese

    A great recipe for pan fried potatoes with thyme and cheese, perfect for serving alongside steak, pork chops or sausages.

    Serves: 4 

    • 2 tablespoons olive oil
    • 55g (2 oz) butter
    • 1 medium onion, thinly sliced
    • 2 cloves garlic
    • 450g (1 lb) waxy potatoes, thinly sliced
    • salt and pepper, to taste
    • 1 tablespoon chopped fresh thyme leaves
    • 110g (4 oz) semi-hard cheese, thinly sliced

    1. In a frying pan over a medium heat, add the oil and butter followed by the onion and garlic. Cook for about 5 minutes until the onions turn soft. Add the potatoes, salt, pepper and thyme and toss gently in the cooking oil. Cover and cook over a low heat for 25 minutes until the potatoes are soft, turning occasionally.
    2. Lay the cheese over the potatoes and cook for a few minutes until the cheese has melted. Serve immediately.


    This recipe calls for waxy potatoes which are good at remaining firm when cooked. A great variety to use in the recipe would be Jersey Royals.
    This recipe works best with a semi-hard cheese such as Taleggio or Port Salut.

    A tasty side dish although I had it as a main using red onions, Lady Balfour potatoes and mature cheddar.  -  15 Jan 2015
