In a frying pan over a medium heat, add the oil and butter followed by the onion and garlic. Cook for about 5 minutes until the onions turn soft. Add the potatoes, salt, pepper and thyme and toss gently in the cooking oil. Cover and cook over a low heat for 25 minutes until the potatoes are soft, turning occasionally.
Lay the cheese over the potatoes and cook for a few minutes until the cheese has melted. Serve immediately.
This recipe calls for waxy potatoes which are good at remaining firm when cooked. A great variety to use in the recipe would be Jersey Royals.
This recipe works best with a semi-hard cheese such as Taleggio or Port Salut.
