Easy beansy sausage and bean casserole

    55 min

Really easy casserole that's perfect for warming you up on a cold winter night. I make it with pork and tomato sausages for a bit of extra flavour, but you can use whatever your favourite sausages are.

    Serves: 4

    • 2 teaspoons cooking oil
    • 1 medium onion, chopped
    • 8 sausages
    • 1/2 to 1 teaspoon chilli powder
    • 2 cans baked beans
    • 1 can chilli beans
    • 1 can butter beans or chickpeas (optional)
    • 1 tablespoon Worcestershire sauce (optional)

    1. Preheat the oven to 200 C / Gas 6. Heat the cooking oil in a pan and fry the onion and sausages with the chilli powder, if using, until browned.
    2. Put the onions and sausages in an ovenproof lidded casserole dish. Add all of the beans and the Worcestershire sauce into the dish and stir well.
    3. Cover and cook in the oven for 30 to 40 minutes, until fully heated.

There are loads of variations you can use to adapt this recipe. You can add mushrooms, herbs, chorizo or anything else you like. The chilli powder is optional, but gives it more of a kick!
