Deliciously simple paella

    If, like me, you love paella but don't like all the fiddly shellfish, then this is the dish for you!

    Serves: 8 

    • 4 tablespoons olive oil
    • 2 small onions, finely chopped
    • 3 cloves garlic, finely chopped
    • 1 red pepper, cut into 1cm chunks
    • 1/2 teaspoon paprika
    • 1 pinch of saffron
    • 350g long grain rice
    • 200g chicken strips, cooked
    • 400g frozen prawns
    • 1/2 chorizo sausage, chopped
    • 600ml boiling water
    • 1 vegetable stock cube
    • 3 tablespoons tomato puree
    • salt and black pepper
    • fresh parsley to garnish

    1. Preheat the oven to 200 C / Gas 6.
    2. Heat the oil in a large, ovenproof pan. Add the onion, garlic and red pepper. Cook for 10 minutes so the red pepper releases its colour, add the paprika and the saffron.
    3. Add the rice and stir to ensure the rice is coated with the oil. Mix in the chicken, prawns and chorizo.
    4. Add the boiling water, stock cube, tomato puree, salt and pepper. Mix really well.
    5. Bring up to the boil, cover with a tight fitting lid and place in the oven. Cook for 15 minutes, remove from the oven and stir well. Replace the lid and leave to stand for 10 minutes.
    6. Serve straight from the pan with a sprinkling of fresh parsley.
