Apricot and almond couscous

    The steamed couscous with apricots and almonds makes a great side to any Moroccan or Middle Eastern dish.

    Serves: 6 

    • 340g couscous
    • 600ml cold water
    • 75g dried apricots, sliced into thin strips
    • 55g toasted flaked almonds
    • salt and pepper to taste
    • freshly chopped coriander, to taste

    1. Place couscous in large bowl; pour water on top and set aside for 30 minutes, fluffing it with a fork occasionally.
    2. Combine couscous and apricots together until well mixed.
    3. Line a steamer with muslin; add couscous mixture and cover with foil. Steam the couscous for 20 minutes; transfer into a serving dish and top with toasted flaked almonds and fresh coriander.
