This pan fried potato cake is very tasty and incredibly versatile. A great side dish or base to numerous meals, from breakfasts with eggs, to lunch with a salad to dinner with sausages and baked beans; the ways to use this potato cake are endless!
In a large bowl, combine the grated potato, onion, fresh parsley, egg, salt and pepper. Mix thoroughly.
In a 23cm (9 in) large frying pan, heat the olive oil and add all of the potato mixture to the pan. Pat it down inside the pan to form a cake. Fry gently for 5 to 7 minutes, then using a plate, turn the cake and cook on the other side until crispy and golden brown. Slice and serve immediately.
