Christmas prune cake

    Prune cake is a smart alternative to traditional Christmas cakes for diabetics. Prunes add natural sweetness to this Christmas cake without added sugar.

    Serves: 12 

    • 90g mashed banana
    • 120g butter, softened
    • 3 large eggs, beaten
    • 1 teaspoon vanilla extract
    • 300ml water
    • 450g plain flour
    • 2 teaspoons baking powder
    • 1 teaspoon bicarbonate of soda
    • 1/4 teaspoon nutmeg
    • 1 pinch of salt
    • 250g chopped prunes

    1. Preheat the oven to 180 C / Gas 4.
    2. Beat together bananas and butter until creamy. Add eggs, vanilla and water. Stir in flour, baking powder, bicarb, nutmeg and salt. Fold in prunes. Spoon mixture into a 23x33cm tin, or a 25cm Bundt tin, or two 23cm round cake tins.
    3. Bake in the preheated oven until a knife inserted into the centre comes out clean. Time will vary depending on the tin used, but check after 20 to 25 minutes.
