About this recipe: My easy peasy cheats green curry. 3 simple steps to a quick delicious meal enjoyed by all! Serves 4

Serves: 4 

  • 4 Chicken breast fillets, diced
  • 3 heaped tablespoons of green curry paste
  • 1 tin of coconut milk
  • 1 red chilli, seeds removed, finely chopped
  • 100 grams mange tout
  • 5 small potatoes, peeled and sliced
  • 1 aubergine diced
  • 1 brown onion chopped
  • 3 garlic cloves chopped
  • Drizzle of olive oil
  • Drizzle of soy sauce

Prep:10min  ›  Cook:50min  ›  Ready in:1hr 

  1. Heat olive oil in a fry pan over medium-high heat. Cook onions, garlic, curry paste and coconut milk until combined
  2. Increase heat to high and add chicken. Bring to the boil for 1 minute and add potatoes, aubergine, mange tout, chilli and a drizzle of soy sauce. Simmer for 45 minutes on a low heat
  3. Serve hot with steamed jasmine rice!


Experiment and have fun with different vegetables and meat. You could even switch up green curry paste for a red curry paste.
