About this recipe: The perfect dessert to compliment a winter dinner dish. Enjoy curled up on the sofa with loved ones!

Serves: 8 

  • 1 1/2 cups of self raising flour
  • 1 egg whisked
  • 1/2 cup of thin cream
  • 60g butter cut into cubes
  • 2/3 cup golden syrup
  • 2 1/2 cups of cold water
  • 2/3 cup caster sugar
  • 50g extra butter

  1. In a large mixing bowl, combine cubes of butter with flour by pinching it all together using finger tips. Add the cream and the egg and combine using hands.
  2. With a little flour on your hands, roll mix into 16 -18 individual balls. A little smaller than a golf ball.
  3. Place the extra butter, water, sugar and golden syrup into a saucepan and stir continuously over a low heat until butter is completely melted and sugar is completely dissolved.
  4. Increase heat to a low-medium simmer. Place all balls into the syrup and leave covered for 20 - 25 minutes. Serve with sauce from the saucepan and cream or ice cream.


If making balls in advance, they might set and go a little hard. Simply roll them around in your hands again until they are soft.
