Combine grated potatoes, beaten eggs and sliced sausage. Season with salt, pepper and basil.
Heat a drizzle of oil in a frying pan over medium heat. Once hot, spoon in the pancake mixture, using a tablespoon for each pancake.
Cook pancakes till golden brown on both sides, flipping once, about 10 minutes. Remove from pan and keep warm. Add more oil and repeat with remaining mixture.
