Be sure to prepare the dough at least 2 hours before you want to start preparing the pizza so it has time to rise
Combine 110g of plain white flour, 110g of strong white flour and half a teaspoon of salt in a large bowl
Boil water, then dissolve 3g of fast action yeast in 110ml of the boiling water
Stir the water and yeast mixture, then add to the flours and salt, then add 1 dessert spoon of olive oil to this mixture and mix to form a rough dough - the dough while look quite dry at this point but don't add any more liquid as it becomes more elastic as you knead it
Turn the dough out onto a lightly floured surface and knead for 10 minutes then put the dough into a lightly oiled bowl,cover with cling film and leave in a warm room to rise for at least 2 hours
While the dough is rising, cut half a white or red onion into half rings white a knob of butter is heating in a pan. Add the onions to the pan and fry until they begin to begin turn translucent. Add a few teaspoons of sugar to the onions to caramelize and set aside.
Start preparing the garlic bread around 30 mins before you would like it to be served to ensure it is ready in time. Set oven to 180 degrees celsius, and cute a piece of baking parchment large enough to cover a baking tray which will fit a small pizza
Knock risen dough back onto lightly floured surface and roll into desired shape and size, try and make the base as thin as possible . When the base is ready, transfer to the baking tray
Melt 1 dessertspoon of your favorite butter in a microwave proof bowl for around 10 seconds, remove from heat, and add 4 large crushed cloves of garlic ( you may want to add more to suit your needs as the taste of garlic in this recipe isn't overpowering) , stir into butter with fork and return to microwave for around 5 seconds. When the mixture is completely melted, pour evenly over the pizza base
Add the caramelized onions, thyme and a thin layer of cheddar cheese to the base
Cook for 7-10 mins, or until the crust is golden brown.
