    About this recipe: This sweet potato pie gets added sweetness from a gooey marshmallow topping. Definitely one for those of us with a sweet tooth!

    Serves: 8 

    • 200g digestive biscuits, crushed
    • 1/4 teaspoon ground nutmeg
    • 1 tablespoon caster sugar
    • 120g butter, melted
    • 225g cream cheese, softened
    • 400g cooked and mashed sweet potatoes
    • 2 tablespoons soft brown sugar
    • 60ml single cream
    • 2 eggs, lightly beaten
    • 1/2 teaspoon vanilla essence
    • 200g miniature marshmallows

    1. Preheat the oven to 180 C / Gas 4. Lightly grease a 23cm springform tin.
    2. Mix digestive biscuits, nutmeg, caster sugar and melted butter in a bowl. Press mixture into the prepared tin to form a base.
    3. Bake the biscuit base in the preheated oven until lightly browned, about 10 minutes. Remove and set aside.
    4. Blend cream cheese, sweet potatoes, brown sugar, single cream, eggs and vanilla in a large bowl. Spoon evenly over the baked base and smooth out.
    5. Bake pie in the preheated oven until set, about 60 minutes. Place marshmallows on top to melt during the last 10 minutes.
