Mum's carrot banana cake

    This carrot banana cake recipe was passed down to me by my mum. It's simple to make, uses few ingredients and tastes wonderful.

    Serves: 16 

    • 300g plain flour
    • 55g caster sugar
    • 55g brown soft sugar
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon salt
    • 2 eggs, lightly beaten
    • 3 ripe bananas, mashed
    • 80ml vegetable oil
    • 1 teaspoon vanilla essence
    • 3 carrots, peeled and grated
    • 70g chopped walnuts

    1. Preheat the oven to 180 C / Gas mark 4. Grease a loaf tin.
    2. Combine flour, caster sugar, brown sugar, bicarb, cinnamon and salt. Whisk eggs, bananas, oil and vanilla in a separate bowl. Stir into dry ingredients until just moistened. Fold in carrots and walnuts; pour into prepared tin.
    3. Bake in the preheated oven until a skewer inserted into the centre comes out clean, 55 to 65 minutes. Cool for 10 minutes in the tin before removing to a wire rack to cool completely.

    Had some sad bananas awaiting the bin, and loads of carrots, didn't add cinnamon was out date by a lot, so added mixed spice, easy to make, and smelt lovely baking in the oven, for me would slightly reduce the amount of sugar, as the bananas were very sweet, this would be glorious spread with butter, thank you for a lovely recipe!  -  22 Jan 2017


    Delicious, light and easy to make. Added sultanas instead of walnuts and sprinkled Demerara sugar on the top prior to cooking.  -  06 Oct 2016
