Natural pancakes

    So these really were something of a revelation when I discovered them a couple of years ago. They're dairy-free, gluten-free, flourless, low-calorie and, of course, 100% natural - no horrible refined sugar! They're honestly so, so easy to make, although it did take me a few goes to get them just right; the first couple of times, I just ended up with a pan covered in brown-y mush. Yum. I find that the longer you beat the batter for, the better (and by "better", I mean thicker, fluffier, yummier pancakes).

    Serves: 2 

    • 1 ripe banana
    • 2 medium-sized eggs
    • ...yes, really. That's IT!

    1. Mash the banana thoroughly so it's nice and smooth, and crack the egg in. Beat like you mean it for about 3 minutes.
    2. Heat some oil in a pan (I like to use extra virgin olive oil) on a low-medium heat and when it's nice and warm, pour some of the batter into the pan. Give it about 30 seconds, flip, repeat until cooked through and BAM! The healthiest mother-flipping pancakes you've ever eaten! (pun 100% intended).

    I was a little unsure that this would be sweet enough, however when I tried them they were amazing!! So much healthier and so tasty too. Definitely would have these again!!  -  25 Jan 2015


    These are great for the kids!! Couldnt make them quick enough for my daughter, she was waiting with her plate in hand. Think they will become a family favorite!!  -  22 Sep 2013
