Preheat the oven to 160 C / Gas 3. Grease or line cupcake tin.
Put flour, butter and sugar in a bowl. Mix till you achieve a lumpy mixture. Add the eggs one at a time, beating after each addition. Whisk the mixture till light and fluffy. Finally, add the vanilla. Divide mixture between cupcake cases.
Bake for 10 to 15 minutes, or until the cupcakes test done when a skewer is inserted in the centre.
This is a lovely recipe/ method which i tweaked by doubling and used sacrulose sweetner/ gliten free self raising flour/ vanilla pod/ cinnamon and topped with grated sugar free dark chocolate. The cupcakes came out gorgeous 😊 and are going to be taken straight to school as it's my child's final day at yr 6 in primary school. - 17 Jul 2015
