Cinnamon, nutmeg and clove make this hearty wholemeal and oat pancake mix a real treat. This makes a little over 1kg of pancake mix. Make some mix for yourself and put some in decorative jars to give away as gifts.
Combine oats, plain flour, wholemeal flour, powdered milk, baking powder, ground cinnamon, salt, cream of tartar, nutmeg and clove in a large bowl. Store in an airtight container in the fridge for up to 3 months.
To prepare the pancakes:
Combine 2 eggs and 80ml vegetable oil in a bowl. Alternately stir in 250g pancake mix and 250ml water. Mix until well blended.
Pour in large spoonfuls onto a lightly greased frying pan over medium-high heat. Cook until tops start to bubble, 2 to 3 minutes. Turn and cook until browned, 2 to 3 minutes.
