Lemon and raspberry mess

    This lemon raspberry mess is an easy-peasy, tasty dessert, ready in minutes. I couldn't believe how easy this and yet gorgeous it looks and tastes. It's like lemon meringue pie without the hassle! You can use half fat creme fraiche if liked.

    Serves: 4 

    • 1 (200ml) tub creme fraiche
    • 200ml lemon curd, such as 'Waitrose Seriously zesty'
    • 4 ready-made meringue nests
    • fresh raspberries to garnish

    1. In a dish, gently combine small pot of creme fraiche and equal amount of lemon curd (or use less lemon curd to taste).
    2. Crumble 4 meringue nests into mix. Mix gently and spoon this into four individual ramekins or serving dishes. Top with raspberries.
    3. Cover with cling-film and chill in the fridge before serving.
