American pancake mix

    This pancake mix recipe makes 'instant' American-style pancakes. Fluffy, easy to make and so delicious, these pancakes are perfect with maple syrup and fresh blueberries.

    Makes: 3 batches of pancakes

    • 900g plain flour
    • 100g dried milk powder
    • 3 tablespoons caster sugar
    • 3 teaspoons baking powder
    • 2 teaspoons salt
    • 1 1/2 teaspoons bicarbonate of soda

      For the pancake mix:

    1. Combine plain flour, milk powder, sugar, baking powder, salt and bicarb in a lidded container or large plastic bag. Seal and shake until well blended. Store in the cupboard for up to 3 months.
    2. To prepare the pancakes:

    3. To make batter: Whisk together 2 eggs, 450ml water, 2 tablespoons lemon juice and 4 tablespoons melted butter until well combined. Pour liquid ingredients over 250g pancake mix and stir until just combined. Don't over-mix and don't worry if there are lumps!
    4. Heat a frying pan or griddle to medium-high and lightly grease. Gently ladle batter onto the pan. When bubbles appear around the edges of the pancakes, 3 to 4 minutes, gently flip the pancakes. Continue to cook until golden and set, 2 to 3 minutes.


    Make blueberry pancakes by sprinkling blueberries on each pancake just after adding the batter to the pan.
