Yummy, scrummy, sticky toffee pudding

The Earl Grey tea adds a nice aromatic essence to the pudding and really helps it stay moist. A good winter pudding.

Ingredients
Makes: 1 toffee pudding
- 150g dates
- 200ml earl grey tea
- Big pinch bicarbonate of soda
- 150g self raising flour
- Pinch ginger
- 85g butter
- 120g brown sugar
- 1 egg
- 25ml dark treacle/honey
- Splash rum (optional)

- Soak dates in tea and soda for 30 minutes
- Rub flour, ginger, sugar and butter together
- Add egg, dates, tea, treacle/honey and rum to the butter mix.
- Cook in a tray at 160°c / gas mark 4 for 25 minutes.
- Take out the oven and check it is cooked through, but still moist in the middle.
- Leave to cool.
- Turn out the tray and cut into squares.
- Serve with butterscotch sauce (see sauces) and ginger ice cream.
