Gluten free hazelnut macaroons

    These delicious gluten free macaroons are made with hazelnuts giving them a wonderful flavour and texture.

    Makes: 15 - 20 Macaroons

    • 1 large egg white
    • 110g (4 oz) ground hazelnuts
    • 110g (4 oz) caster sugar

    1. Preheat the oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    2. In a small bowl, whisk the egg white to form stiff peaks.
    3. In a separate bowl, mix the ground hazelnuts and sugar together. Slowly fold in the egg white to form a paste.
    4. Roll the mixture into small bite size macaroons and then flatten to 4cm diameter discs (1 1/2 in) on the baking parchment.
    5. Bake in the top of the oven for 15 minutes. Then move the macaroons to the bottom of the oven and switch the oven off, leaving the door open ajar. The macaroons will harden as they slowly cool.
    6. Once the oven has cooled, transfer the macaroons to a cooling rack.
