    These delightful and crumbly sugar biscuits are perfect for a party or relaxed get together. Easy to make and easy to store, they are sure to be a crowd pleaser.

    Makes: 15 to 20 biscuits

    • 110g (4 oz) margarine, softened
    • 170g (6 oz) caster sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 140g (5 oz) self raising flour
    • 1 pinch bicarbonate of soda
    • 1 pinch cream of tartar
    • 2 tablespoons caster sugar
    • 1 teaspoon cinnamon

    1. Preheat the oven to 200 C / Gas 6. Grease a baking tray or line with baking parchment.
    2. Cream together the margarine and 170g (6 oz) sugar until light and fluffy. Add the egg and the vanilla extract and mix well. Sift in the flour, bicarbonate of soda and cream of tartar and mix until well blended and smooth. Set aside.
    3. In a separate bowl, combine the 2 tablespoons caster sugar and cinnamon. Take a teaspoon of biscuit mixture at a time and lightly coat with the sugar and cinnamon mixture, press down slightly to form round discs and arrange well spaced out on the prepared tray.
    4. Bake in preheated oven for approximately 10 minutes until the biscuits are firm and golden brown.

    Taste is very very nice... did something wrong and they came out as one lump like a tray bake - but I simply cut it up and the biscuit still taste very very nice  -  07 Mar 2016
