Fluffy scones

    These soft and fluffy scones are a simple alternative to fruit or savoury scones. Easy to make and very tasty, just slice open and top with cream and jam for the perfect cream tea.

    Serves: 12 

    • 450g (1 lb) self raising flour
    • 2 tablespoons caster sugar
    • 110g (4 oz) butter
    • 2 eggs
    • 300ml (1/2 pt) milk

    1. Preheat the oven to 220 C / Gas 8. Line a baking tray with baking parchment and lightly dust with flour.
    2. Sift the flour into a bowl and rub in the butter to resemble fine breadcrumbs. Add the sugar and mix well.
    3. Break the eggs into a measuring jug and pour in enough milk to make the mixture up to 300ml (1/2 pt) then add to the flour and mix until well blended and a good bind forms. Turn out the dough onto a floured surface, roll out thickly and cut into discs.
    4. Transfer scones onto the prepared baking tray with sides touching. Brush tops with milk.
    5. Bake in the preheated oven for 10 to 15 minutes. Remove from the oven, transfer to a cooling rack and cover with a clean tea towel.


    There are several variations/additions to this recipe which are easy to implement depending on taste and occasion. If you like fruit in your scones, add 55g (2 oz) of sultanas to the recipe.
    For a slightly different taste and texture, in place of the self raising flour, use 225g (1/2 lb) plain white flour and 225g (1/2 lb) wholemeal flour.
    For a savoury scone, omit the sugar and in its place, add 55g (2 oz) of grated cheese.
