Apple harvest squares

    These delicious apple harvest squares are light, fruity and topped with walnuts and coconut. Serve warm with vanilla ice cream.

    Serves: 8 

    • For the base
    • 200g (7 oz) self raising flour
    • 60g (2 1/2 oz) sugar
    • 3/4 teaspoon salt
    • 110g (4 oz) margarine
    • For the filling
    • 4 apples, cored and sliced
    • 2 tablespoons lemon juice
    • 110g (4 oz) sugar
    • 1/3 teaspoon cinnamon
    • For the topping
    • 110g (4 oz) sugar
    • 1 egg, beaten
    • 85ml (3 fl oz) evaporated milk
    • 110g (4 oz) chopped walnuts
    • 85g (3 oz) desiccated coconut

    1. Preheat the oven to 190 C / Gas 5. Grease a square cake tin or line with baking parchment.
    2. For the base:

    3. In a bowl, sift together the flour, 60g (2 1/2 oz) sugar and salt. Rub in the margarine until the mixture resembles fine breadcrumbs. Press into the prepared dish or tin.

    5. Arrange the apple slices over the crumble base and sprinkle with lemon juice and 110g (4 oz) sugar mixed with cinnamon.
    6. Bake in the preheated oven for 20 minutes until the apples soften. Remove from oven.
    7. For the topping:

    8. Combine 110g (4 oz) sugar with the egg, evaporated milk, walnuts and desiccated coconut. Spread over the top of the apples and return to the oven.
    9. Bake for another 25 minutes until golden brown.
