Ginger slice

    I find these gingery treats to be absolutely fantastic. They are so flavourful, studded with glace ginger and topped with almonds.

    Serves: 8 

    • 220g plain flour
    • 200g caster sugar
    • 125g glace ginger
    • 185g butter, melted
    • 1 egg
    • milk for glazing
    • 30g blanched almonds

    1. Preheat oven to 180 C / Gas 4.
    2. Sift flour, then combine with sugar and ginger. Mix in melted butter and egg. Press mixture into well greased 20cm sandwich tin. Brush top with a little milk and decorate with almonds.
    3. Bake for 45 minutes in preheated oven. Cool in tin. When cool cut into wedges.
