    Serves: 8 

    • 8 oz Self Raising Flour
    • 4 oz Demerara Sugar
    • 4 oz Margarine
    • 2 oz Currants
    • 2 eggs whisked

    1. In a bowl place flour, sugar and margarine. With a wooden spoon rub mixture together until looks like breadcumbs.
    2. Add currants and gently stir into mixture. Pour in ¾ egg mixture and mix gently together until mixture is even.
    3. If mixture is firm roll into sausage and cut into rounds or roll out and cut into circles.If mixture is loose, using a table spoon place evenly sized scoops on a baking tray.
    4. Using a pastry brush use remaining egg to brush tops of scones.
    5. Bake in a moderate oven 160 ºC - 170 ºC gas mark 3 for 5 - 8 minutes or until golden brown.
    6. Consume daily until all gone then begin again!
