Easy chicken Marbella

    Serves: 12 

    • 4 (1kg) chickens, jointed
    • 1 head garlic, crushed
    • 4 tablespoons dried oregano
    • 120ml red wine vinegar
    • 4 tablespoons olive oil
    • 200g prunes, pitted
    • 75g pitted olives
    • 4 bay leaves
    • 200g brown soft sugar
    • 225ml white wine
    • 4 tablespoons parsley
    • 4 tablespoons chopped fresh coriander

    1. In large bowl, combine chicken, garlic, oregano, vinegar, olive oil, prunes, olives and bay leaves. Marinate in fridge overnight.
    2. Preheat oven to 180 C / Gas 4.
    3. Arrange chicken in single layers in large shallow pan and spoon marinade over.
    4. Sprinkle with brown sugar and pour over wine. Bake for 45 minutes to an hour, basting frequently.
    5. Serve with juice. Sprinkle with parsley and coriander.
