About this recipe: Most people have a personal version of a chicken curry recipe, this is mine. I make it quite a lot, because it is easy and I never get tired of it.

Serves: 4 

  • 170g (6 oz) natural yoghurt
  • 2 garlic cloves, chopped
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground ginger
  • 1 pinch salt
  • 450g (1 lb) chicken pieces
  • 2 teaspoons vegetable oil
  • 1/2 small onion, sliced
  • 225g (8 oz) tomatoes, chopped

  1. Mix yoghurt, garlic and seasonings in a bowl. Coat chicken in the yoghurt and leave at room temperature to marinate for 30 minutes.
  2. Meanwhile, fry onion in the oil. Add chicken, marinade and tomatoes. Bring to the boil, reduce heat and leave to simmer. Turn chicken a few times until it is tender - about 25 to 30 minutes.

Serving suggestion:

Serve with rice and naan bread.
