Leek soup

    A leek soup recipe that is chock-a-block with leek! Carrots are added for just a hint of flavour and colour. The cream at the end is optional, but does intensify the flavour. Enjoy!

    Serves: 4 

    • 1 knob butter
    • 1 small onion, chopped
    • 2 leeks, sliced
    • 1 carrot, diced
    • 600ml (1 pt) vegetable stock
    • salt and pepper to taste
    • 1 tablespoon cream (optional)

    1. Fry chopped onion and sliced leeks in the butter, do not allow to brown. Add stock and finely diced carrot and simmer until tender; blend, leaving out a small amount of carrot and toss these back into the blended soup to give a dash of colour. Season with salt and pepper to taste. At the last moment before serving, add a tablespoon of thick cream.
