This vegetable soup is quite filling and healthy, because it is made with fibre rich lentils, split peas and barley. Add butter beans, borlotti beans or haricot beans, if you like.
Place split peas and lentils in a bowl, cover with water and soak overnight.
Wash split peas and lentils and put in a large saucepan along with the barley. Chop vegetables into 5cm (2 in) cubes. Add all ingredients to the saucepan and add water to cover.
Simmer for 20 to 30 minutes or until soft. Liquidise. Add additional water or stock if required.
