Cheese pate

    I mix cottage cheese with a little bit of cream cheese to cut down fat and calories for this creamy spread.

    Serves: 4 

    • 225g (8 oz) cottage cheese
    • 50g (2 oz) cream cheese
    • 1 tablespoon single cream
    • 1 small onion
    • 1 clove garlic
    • salt and pepper to taste
    • celery salt
    • watercress to garnish
    • freshly made melba toast

    1. Sieve cottage cheese into a bowl. Beat in cream cheese and cream.
    2. Finely grate onion, reserving the juice. Add onion and juice to the bowl.
    3. Peel and crush garlic with some salt. Mix into cheese. Taste and season well with pepper and celery salt. Put into a dish and garnish with watercress.
    4. Cut slices of bread for toast. Toast on both sides. Cut in half diagonally to make triangles, and then slice the bread through the centre between the toasted sides to make two slices from one. Place in a large roasting tin and dry off at bottom of oven until crisp.

    Followed nearly to the letter but didn't read part one properly and endednup having to use a masher instead of a sieve. However I followed the rest to the letter and I must say what I have had so far is fantastic! Definitely saving this for making again!  -  21 Mar 2017
