Sieve cottage cheese into a bowl. Beat in cream cheese and cream.
Finely grate onion, reserving the juice. Add onion and juice to the bowl.
Peel and crush garlic with some salt. Mix into cheese. Taste and season well with pepper and celery salt. Put into a dish and garnish with watercress.
Cut slices of bread for toast. Toast on both sides. Cut in half diagonally to make triangles, and then slice the bread through the centre between the toasted sides to make two slices from one. Place in a large roasting tin and dry off at bottom of oven until crisp.
