    About this recipe: A Greek inspired recipe for mushrooms with Mediterranean flavours. Serve cold like antipasti with crusty bread.

    Serves: 4 

    • 450g (1 lb) mushrooms
    • lemon juice
    • 3 tablespoons olive oil
    • 2 peeled and chopped tomatoes
    • 6 coriander seeds
    • 1 sprig thyme
    • 3 tablespoons water
    • 3 crushed peppercorns
    • bay leaf
    • salt to taste

    1. Wash and dry mushrooms, coat with lemon juice.
    2. Put all other ingredients into a pan, bring to boil and simmer for 2 to 3 minutes. Add mushrooms and cook for 5 minutes. Remove mushrooms and place in a serving dish.
    3. Reduce sauce further and pour over mushrooms. Serve cold.
