About this recipe: This is an exquisite savoury tart from the Pays Basque region of France. It is made with green pepper, tomatoes and Parmesan cheese.

Makes: 1 tart

  • 170g (6 oz) shortcrust pastry
  • 25g (1 oz) butter
  • 1 large onion, chopped
  • 1 large clove garlic, crushed
  • 1 green pepper, seeded and cut into strips
  • 4 large ripe tomatoes, skinned and chopped
  • 2 eggs
  • 1 egg yolk
  • 300ml (1/2 pt) cream
  • salt and pepper to taste
  • 1 tablespoon grated Parmesan cheese

  1. Preheat oven to 190 C / Gas 5. Line flan ring with pastry.
  2. Soften onion and garlic in butter. Add green pepper. After 5 minutes stir in tomatoes. Pile into pastry case and pour over eggs, egg yolk and cream. Season well and stir in the cheese.
  3. Bake in preheated oven for about 40 minutes or until set and golden brown.
