This is a souffle like dish with fresh sweetcorn. It has a delicious sweetness to it and is wonderfully light and airy. Serve as a special side dish to your favourite roast or even chilli con carne.

Ingredients
Serves: 4
40g (1 1/2 oz) butter
40g (1 1/2 oz) plain flour
salt and black pepper, to taste
300ml (1/2 pt) milk
150g fresh sweetcorn kernels
1 teaspoon chopped parsley
1 teaspoon onion juice
3 egg yolks
4 egg whites, beaten to stiff peaks

Preheat oven to 180 C / Gas 4. Grease a deep 450ml (1 1/2 pt) oven dish.
Melt butter in a pan, add flour and cook for a few minutes, stirring well. Season, remove pan from heat, blend in the milk and return to heat to cook for a few minutes.
Take off the heat, add the sweetcorn, onion juice and parsley, stirring well. Whisk in egg yolks one at a time. Season, then fold in stiffly beaten egg whites. Turn into prepared oven dish.
Bake for 20 minutes, or until centre is set. Serve at once.
