    About this recipe: If you are looking for a new and exciting way to prepare courgettes, try this recipe with mustard and Gruyere cheese. It is guaranteed to surprise your taste buds.

    Ingredients
    Serves: 6 

    • 1kg (2 1/4 lb) courgettes
    • 25g (1 oz) butter
    • salt to taste
    • 1 teaspoon mustard powder
    • 3 tablespoons double cream
    • 150g (5 oz) Gruyere or Parmesan cheese
    • ground black pepper to taste

    Method

    1. Preheat oven to 400 C / Gas 6.
    2. Chop courgettes roughly in large pieces and brown in a frying pan with butter. Add salt and cover pan.
    3. Beat together mustard and cream. Add to courgettes and heat through. Place mixture in a baking dish. Slice cheese and lay on top.
    4. Bake in oven until cheese has formed a golden crust for about 10 minutes. Sprinkle with pepper and serve hot.

    Really tasty way to use courgettes. I put breadcrumbs on top to make it a bit more crispy, but loved the overall flavour. Can freeze the dish prior to the final bake. Will definitely make again. - 28 Aug 2015
