About this recipe:This cheese pudding is the British version of a French cheese souffle. Use your favourite cheese for this recipe. It's a nice side dish for four or can be a light main course for two with some green veg or a salad.
25g (1 oz) butter
50g (2 oz) breadcrumbs
300ml (1/2 pt) milk
75g (3 oz) grated cheese (or more)
2 eggs, separated
a little prepared mustard
salt, to taste
cayenne pepper, to taste

Preheat the oven to 180 C / Gas 4.
Put breadcrumbs and butter into a basin. Bring milk to the boil, then pour into the basin; add cheese (keeping back about 1 dessertspoon), egg yolks, mustard and salt. Beat well.
Beat egg whites stiffly in a clean bowl and fold into mixture. Pour into glass pie dish, sprinkle with remaining cheese.
Bake in preheated oven for about 20 minutes until risen and nicely browned.
I made this following the recipe to the letter. I found it to be a bit stodgy and wasn't sure what temperature to bake it at, so did it at 170C in a fan oven for 25-30 minutes. It tasted fine, but it wouldn't serve 4 people, unless 3 were small children. - 28 Feb 2014
