Spiced raisin mini muffins

    These miniature muffins are aromatic, sweet and totally moreish. You can use raisins or even try chopped dates. If you use dates, consider using less caster sugar since dates are so sweet.

    Serves: 24 

    • 150g caster sugar
    • 150g chopped raisins or sultanas
    • 225ml water
    • 110g butter
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon mixed spice
    • 250g plain flour
    • 1 teaspoon bicarb of soda
    • 1/4 teaspoon salt
    • 150g chopped walnuts

    1. In a saucepan, combine the sugar, raisins, water, butter, cinnamon and mixed spice. Bring to the boil and simmer till sugar is dissolved. Remove from the heat and allow to cool to room temperature.
    2. Combine the flour, bicarb and salt in a mixing bowl. Add the cooled raisin mixture and stir well. Fold in the nuts. Spoon the mixture into miniature muffin cases.
    3. Preheat the oven to 180 C / Gas 4.
    4. Bake muffins for 12 to 15 minutes, or until they test done when a skewer is inserted in the centre.


    You can make regular sized muffins instead of mini muffins; simply increase the baking time as required.

    These are delicious. I added some grated orange zest to the mix which made them even tastier. A quick and easy recipe  -  22 Mar 2013
