Cuban pork fillet in the slow cooker

About this recipe: Orange juice, lemon and plenty of spices give this pork fillet a tonne of flavour. The best part about this dish is that it is made in slow cooker. Start it in the morning, and it will be ready for supper when you get home!


Serves: 6 

  • 1 onion, sliced
  • 1.4kg pork fillet
  • 3 tablespoons finely chopped garlic
  • 1 tablespoon ground cumin
  • 1 tablespoon barbecue seasoning blend
  • 1 teaspoon salt
  • 1 teaspoon chilli powder
  • 120ml orange juice
  • 3 tablespoons red wine vinegar
  • 1 lemon, juiced and zested
  • 3 bay leaves

  1. Line the bottom of a slow cooker with onion slices. Place pork on top; sprinkle evenly with garlic, cumin, seasoning blend, salt and chilli powder. Pour in orange juice, vinegar, lemon juice and zest. Add bay leaves.
  2. Cover and cook on low for 6 to 7 hours. Serve by slicing fillet into 4cm slices and drizzle with cooking juices.
