Preheat the oven to 190 C / Gas 5. Grease a 20cm (8 in) square baking dish.
Place cauliflower into a microwave-safe dish and microwave on High until tender, 3 to 4 minutes. Place cooked cauliflower into the prepared baking dish, sprinkle with Cheddar cheese and couscous and dust the top with nutmeg.
Bake in the preheated oven until the top is golden brown and the cheese is melted, 12 to 15 minutes. Stir in butter to taste, if desired.
