Red lentil and potato hotpot

    Layer potatoes, lentils and onions in a baking dish, season, pour over stock, put in the oven and walk away. It is that easy! A wonderfully warming vegan meal.

    Serves: 5 

    • 675g (1 1/2 lb) potatoes
    • 3 onions
    • 225g (8 oz) red lentils
    • 1 dessertspoon Marmite®
    • 50g (2 oz) margarine
    • 150ml (1/4 pt) warm water or vegetable stock
    • salt and ground black pepper, to taste
    • mixed herbs

    1. Preheat oven to 180 C / Gas 4.
    2. Wash, peel and slice potatoes; peel and slice onions; wash lentils.
    3. Put layers of lentils, potatoes and onions in greased pie dish, seasoning between layers and nearly filling dish. Finish with a layer of potatoes.
    4. Dissolve yeast extract in warm water and pour over dish. Dot with margarine and cover. Bake in preheated oven for about 1 hour, or until tender. Brown without lid.

    I tried this last week. It was SOOOO good! My husband loved it too. I added a layer of carrots and broccolli on top of the onions. I added about a pint of veggie stock, and added further water until I could see it cover the top layer of lentils. I didn't have any marmite and I didn't use yeast.. I also forgot to season between the layers, but had plenty of flavor from the stockpot. Will become a stable in this house too. So quick, easy and healthy in addition to tasting fab!  -  23 Feb 2015


    I used to make this dish absolutely years ago, and had no idea where I got the recipe from, so I was very pleased to find it here. It was a regular dish I made then and will be again, Easy and very very tasty.  -  27 Sep 2013


    Tried this recipe to use up some old potatoes and lentils. Wasn't really carefully about measuring the ingredients and hadn't got any marmite but just used vegetable stock. It was absolutely delicious and will make this weekly now!  -  23 Feb 2013
