Macaroni, cheese and tomato bake

My go-to dish when we are having my kid's friends over for dinner. Even the fussiest child loves this cheesy macaroni with tomato sauce.

Ingredients

- 1 onion, minced
- 1 tablespoon oil
- 1kg tinned tomatoes (including juice)
- 170g (6 oz) tomato puree
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 225g (8 oz) macaroni
- 225g (8 oz) cottage cheese
- 225g (8 oz) cubed Cheddar cheese

- In a large pan saute onion in oil until tender. Add tinned tomatoes, puree, salt, sugar, basil and oregano. Simmer covered for 20 minutes, stirring occasionally.
- Meanwhile cook macaroni in a large saucepan with salted water until al dente. Drain.
- Preheat oven to 180 C / Gas 4.
- Mix macaroni with the cheeses and the tomato sauce. Pour into greased 2.4L (4 pt) casserole.
- Bake 30 minutes or until bubbly.
