Nut rissoles

About this recipe: These are wonderful vegetarian "meatballs" with nuts, grated apple and carrots. They are quickly made and taste amazing.

Ingredients

Serves: 4 

  • 110g (4 oz) mixed ground nuts
  • 110g (4 oz) wholemeal breadcrumbs
  • 2 tablespoons tomato puree
  • 2 tablespoons oil or melted butter
  • 1 teaspoon Marmite®, dissolved in water
  • 1 egg
  • 1 onion, grated
  • 1 carrot, grated
  • 1 apple, grated
  • breadcrumbs for coating

Method

Prep:20min  ›  Cook:10min  ›  Ready in:30min 

  1. Mix all ingredients together. Form unto rissoles or balls. Roll in breadcrumbs.
  2. Fry lightly on both sides in hot oil or bake for 10 minutes at 180 C / Gas 4.
