Nut loaf

    Pine nuts, hazelnuts and cashew nuts are combined with breadcrumbs, onions, yeast extract and herbs to make this simple nut roast. Any leftovers make a nice sandwich filler!

    Ingredients
    Serves: 4 

    • 75g (3 oz) margarine
    • 3 large onions, finely chopped
    • 75g (3 oz) ground pine nuts
    • 75g (3 oz) ground hazelnuts
    • 110g (4 oz) dried breadcrumbs
    • 50g (2 oz) ground cashew nuts
    • 2 teaspoons yeast extract
    • 1 teaspoon mixed chopped herbs
    • salt and pepper to taste

    Method
    Prep:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Set oven to 200 C / Gas 6. Lightly butter a loaf tin.
    2. Melt margarine; add onions and cook until golden brown and softened. Add remaining ingredients and mix well.
    3. Spoon into loaf tin, pressing the mixture down, and bake for 30 minutes.
