About this recipe: The onion tart is good hot or cold, as a main course, or as a starter. It is quickly made, especially if you use a prepared pastry case.

Serves: 4 

  • 1 shortcrust pastry case
  • 675 (1½ lb) onions
  • butter
  • 3 eggs
  • 75g (3 oz) Gruyere cheese, grated
  • 3 tablespoons double cream
  • 6 pitted black olives (optional)

Prep:15min  ›  Cook:45min  ›  Ready in:1hr 

  1. Preheat oven to 180 C / Gas 4.
  2. Pre-bake pastry case in the preheated oven for 10 minutes.
  3. Slice onions and cook in butter until soft. Take off heat and add beaten eggs and grated cheese. Stir in cream. Six black olives are a good addition, but it's optional.
  4. Pour into pastry case and bake for 30 minutes.
