125g plain flour
4 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
110g unsalted butter, softened
200g caster sugar
1 teaspoon instant coffee granules
1 teaspoon vanilla extract
4 tablespoons plain chocolate chips
4 tablespoons white chocolate chips
160g dried cherries

Preheat the oven to 180 C / Gas 4. Line two large baking trays with parchment.
Combine flour, cocoa powder, baking powder and salt in a bowl.
Beat butter and sugar together until light and fluffy. Mix in egg, coffee granules and vanilla until well blended. Pour in flour mixture and beat until just combined; fold in chocolate chips and dried cherries. Drop by spoonfuls, about 5cm (2 in) apart onto prepared trays.
Bake in the preheated oven until cookies are just firm, 10 to 12 minutes. Let cool on the tins for 2 minutes then transfer to a wire rack to cool completely.
