About this recipe: The famous dish from Northumberland is usually made with sausage or meat. This is a vegetarian pan haggerty with potatoes, onions and cheese.

Serves: 6 

  • 450g (1 lb) potatoes
  • 225g (8 oz) onions
  • 25g (1 oz) vegetable fat or oil
  • salt and pepper to taste
  • 110g (4 oz) grated cheese

  1. Peel potatoes and onions and slice finely. Dry potatoes in a cloth.
  2. Heat fat in frying pan, add potatoes, onions, seasoning in alternate layers, ending with cheese. Cover with lid and fry gently until nearly cooked through, about 40 minutes; then brown under hot grill.
