450g (1 lb) potatoes
225g (8 oz) onions
25g (1 oz) vegetable fat or oil
salt and pepper to taste
110g (4 oz) grated cheese

Peel potatoes and onions and slice finely. Dry potatoes in a cloth.
Heat fat in frying pan, add potatoes, onions, seasoning in alternate layers, ending with cheese. Cover with lid and fry gently until nearly cooked through, about 40 minutes; then brown under hot grill.
