About this recipe: With a hint of coffee, chocolate chips, cranberries and orange zest, these muffins are perfect with a cup of coffee or as an afternoon treat.


Makes: 12 muffins

  • 250g sifted plain flour
  • 1 tablespoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 60g unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 90g plain chocolate chips
  • 60g dried cranberries
  • 1 teaspoon grated orange zest
  • 110g butter, softened
  • 100g caster sugar
  • 110g brown soft sugar
  • 225ml soured cream
  • 175ml milk
  • 2 eggs
  • 2 tablespoons instant coffee granules
  • 60ml water

  1. Preheat the oven to 190 C / Gas 5. Grease 12 muffin cups or line with paper cases.
  2. Gently stir flour, baking powder, bicarb, cocoa powder, salt, chocolate chips, dried cranberries and orange zest in a bowl until thoroughly combined. Beat butter, caster sugar, brown sugar, soured cream, milk and eggs with an electric mixer on medium speed in a separate mixing bowl until blended.
  3. Gently stir flour mixture into liquid ingredients until just moistened (do not over mix). Dissolve coffee granules in water in a small bowl and stir into the muffin mixture. Spoon into prepared muffin cases, filling about 3/4 full.
  4. Bake in the preheated oven until lightly browned and a skewer inserted into the centre of a muffin comes out clean, 20 to 25 minutes.
