Vegetarian chestnut roast with mushroom stuffing

About this recipe: No one in my family is missing the meat in this vegetarian chestnut roast with a delicious mushroom stuffing. Try adding thyme and grated cheese for a flavour boost.

Serves: 6 

  • Vegetarian roast
  • 1 large onion
  • 1 small eating apple, peeled
  • 1 stick celery
  • 50g (2 oz) butter
  • 3 eggs
  • 450g (1 lb) unsweetened chestnut puree
  • salt, pepper and nutmeg to taste
  • Stuffing
  • 2 large onions, chopped
  • 50g (2 oz) butter
  • 225g (8 oz) mushrooms
  • 1 egg
  • 75g (3 oz) wholemeal breadcrumbs
  • salt, pepper

  1. Preheat oven to 190 C / Gas 5. Grease a 1.2L (2 pt) baking tin and line with parchment.
  2. Vegetarian roast:

  3. Chop onion, apple and celery and saute in butter. Liquidise with eggs. Add to chestnut puree, mix well and add seasoning to taste.
  4. Stuffing:

  5. Fry chopped onions in butter until brown. Add finely chopped mushrooms, cooking rapidly to evaporate any liquid. Off the heat, stir in egg and breadcrumbs to make a soft stuffing. Season.
  6. Place half the roast in tin, then stuffing, and cover with rest of roast. Cover with buttered foil.
  7. Bake for 90 minutes in preheated oven. Stand for a few minutes before turning out.
