Spinach, mushroom and bacon pasta bake

About this recipe: Bacon, mushroom, spinach pasta.

Makes: 1 pasta bake

  • 1 chopped onion, 2 cloves garlic crushed and chopped, 1 tablespoon of butter
  • 250 g chestnut mushrooms, sliced
  • 4 rashers smoked back bacon, chopped
  • 200 g spinach
  • Milk
  • 1 vegetable stock cube
  • Pasta 150g per person
  • Parmesan cheese, breadcrumbs

Prep:10min  ›  Cook:10min  ›  Ready in:20min 

  1. Boil a pan of salted water, then put in dried pasta , boil for 10 mins.
  2. Fry butter and garlic in a table spoon of butter for 5 mins
  3. Then fry sliced mushrooms, and bacon, add some milk ,stiring with a wooden spoon.
  4. Add a veggie cube
  5. Add as much milk as you like, I added 500 mls but if you want it creamier add a little more.
  6. Add parmesan cheese, mix altogether with wooden spoon,
  7. Now add spinach
  8. Drain pasta, and put into the bacon mixture.
  9. Put into a dish , sprinkle with mozzarella cheese and breadcrumbs
  10. Bake for 10 mins


Depending on how many people add more bacon, mushrooms, milk, I didn't use exact measurements I just made it up as I went along. But even if I say so myself it was very nice.

Delicious recipe, we didn't have spinach so I substituted leeks and it works really well. Yum! Really easy to make too. - 13 Apr 2015
