    About this recipe: Tasty baked garlic and herb salmon. Serve the salmon with new potatoes and salad leaves or a bunch of watercress. Such a tasty and healthy option! Shetland, Scotland, UK

    Serves: 4 

    • 50g white bread
    • a few fresh chives, chopped
    • zest of 1 lemon
    • 4 salmon fillets
    • 100g garlic and herb cream cheese

    1. Preheat the oven to 180 C / Gas 4.
    2. Place the bread in a food processor and blend into fine breadcrumbs. Stir in the chives and lemon zest.
    3. Spread the salmon fillets with a thick layer of cream cheese and place on a lightly oiled baking tray.
    4. Top with the flavoured breadcrumbs, lightly pressing them into the cream cheese.
    5. Roast in the oven for 15 to 20 minutes or until cooked.


    If the fish is a little damp, pat it dry with kitchen paper so that the cream cheese is easier to spread without sliding off.
