Salmon fish cakes with chive and red pepper

    These are scrumptious fish cakes. We love how healthy they are, and how they are so packed with flavour!

    Makes: 4 fish cakes

    • 15g butter
    • 1 onion, finely chopped
    • 1/2 red pepper finely chopped
    • 400g salmon, finely chopped
    • 50g cream cheese, softened
    • 100g fresh breadcrumbs
    • 2 tbsp chopped fresh chives
    • 1/2 tsp paprika
    • 1 tbsp garlic powder (optional)
    • plain flour, for coating
    • sunflower oil, for shallow frying

    1. Melt the butter and sauté the onion and pepper for 3 to 5 minutes. Allow to cool then stir in the salmon, cream cheese, breadcrumbs, chives, paprika and garlic. Mix together well.
    2. Form the mixture into 4 patties, toss in a little flour to coat, and chill until firm.
    3. Heat a little oil in a frying pan and cook the salmon cakes for about 8 to 10 minutes, turning once until golden and cooked through.
    4. Place onto kitchen towel to soak up any excess oil. Serve immediately.

    Made these fishcakes for the first (but not last) time today. Easier than I expected and delicious especially with tartare sauce. The whole family enjoyed these.  -  18 Dec 2012
